Hello lovely people!

These past days I've been having a lot of signs pointing me to - joy. Yes, joy. Not productivtiy, success or money, but joy.

I listened to a TED talk by Ingrid Fetell Lee about what things gave us joy, I heard Brendon Burchard (love him!) talk about how you should actually demand joy and I also heard Alexander Heyne, the author of Modern Halth Monk channel talk about manifesting and how things that got him excited (which is akin to joy) also got viral.

Ingrid Fetell Lee talked about how round objects, bright colors and multitude of things/abundance (things like baloons, bubbles, cherry blossoms, confetti) made people feel joyful. Do you agree, do these kind of thing give you joyful feelings?

Around that time I also made small pink pancakes and posted them to my Instagram. I realized they're round, brighly colored and there's a whole stack of them! oh joyful pink pancakes! They're also vegan!

So here is the recipe, in case you want to bring more joy to your table.

Vegan Pink Pancakes (without the famous pitaya powder)

350 ml plant milk of your choice⠀
60 g grated raw beet root⠀
2 tbsp maple syrup⠀
1 tbsp oil of your choice⠀
160 g flour (I used rice+all purpose)⠀
1,2 tsp baking powder⠀
1 tsp psillium husks⠀
pinch of salt⠀
pinch of vanilla powder⠀

to serve:

fresh fruit

raspberry jam/compote

mapple syrup

Mix the first four ingredients in a blender to make something of a pink smoothie.

Add the rest of ingredients and blend/pulse just long enough to incorporate. Do not overmix or you'll get gummy pancakes.

Let the mixture sit for 15 minutes.

Cook on a lightly oiled non-stick pan on medium heat, about 3 minutes on one side, then flip and cook for 2 more minutes.

Serve warm with lots of fresh fruit (berries go superbly well with these!), drenched in mapple syrup. They also freeze well, so you can store them for a breakfast in a hurry.

Do you love pink food as much as I do? And how do you feel about joy? Do you experience a lot of it or could you have more of it in your life?

Would you try these vegan pink pancakes? Pin them for your next sunday morning!

My favorite DIY Multisurface cleaner

Mix 1 cup water, 1 cup white vinegar, 2 tbsp dish soap and 40 drops of antibacterial essential oil (like lavender, tea tree or oregano). Pour in a spray bottle and use on e-v-e-r-y-t-h-i-n-g. Okay, maybe not your flat screen tv (but there's a similar thing you CAN use on it, actually). I use this homemade multisurface cleaner to clean the kitchen cupboards, wood countertops, wooden dining table, windows (yes, it's better than any of those you can buy!), bathroom tiles, shower and toilet seat. It even works on a greasy stove or paint flecks on wooden floor. I also use it to clean my inox fridge, outside and inside.

What about the floors?

To clean the floors I use basically the same thing, I just make it "fresh" everytime, directly in the bucket. I fill the bucket halfway with very hot water and add a few squirts of dish soap. Sometimes I add vinegar and/or essential oils (bergamote, lavender or geranium are my faves). My mother in law, who has the most sparkling floors I've ever seen, taught me that you can use just dish soap and water to clean the floor. I was all for it, because if cleaning supplies can multitask, they should! I use this on tile, laminate and shiplap.

But there are a few cleaners I still buy, partly because I like the smell or because I want those surfaces to be like a 100% clean and I put that responsibility on a reliable brand. :)

The cleaners I do buy

I use homemade cleaners as often as possible, but some things I still clean with regular (eco-friendly) cleaners. For example: the toilet. I buy generic eco friendly toilet cleaner in the drugstore or even at Aldi's. I sometimes even use bleach to clean the toilet (as my mother in law taught me; my mom only ever used eco friendly cleaners on everything). I also use eco friendly cleaner for the bathroom and kitchen sink and sometimes in the shower.

My favorite eco cleaners are the ones by a German company named Frosch (totally not sponosred! But I wouldn't mind it if it was;) You can probably get Frosch cleaners anywhere in the world, as they are available on Amazon, which I just found out). They are widely available, relatively cheap and smell really nice (not like chemicals and VOCs).

Do give this homemade multi-purpose cleaner a try! (If you do, I'd love to hear how you liked it!) And if you would like to know how to clean ANYTHING in your home, check out this mega extensive post on The best cleaning products for every situation Jean put together for Jen Reviews.

An 1-minute exercise right before bed that turned me into an optimist can change your life, too.

The best piece of advice I ever got was not from my mom (she gave some good advice, too, sure), not from a self-help book and not even from a friend. It came from a … comedian. Well, she is a comedian, but she also shares very touching, encouraging stories, so I’m not sure what to call her.

It was Kristina Kuzmic that gave the advice, and I seriously think that little talk changed my life. It was like an introduction into not a new chapter, but like a new book in a series (I see my life as a book series).

She suggested that I (because she was talking directly to me, obviously) keep a “Note” in my phone where I will write, every night right before sleep, the best thing that happened that day. Be very specific about that. Sometimes it’s easy, sometimes it’s not, but do it consistently. She also shared a very moving story of hers that so closely reminded me of a friend who went through something similar, that it really resonated with me.

This advice was very simple, straightforward and specific. I loved that. I could see myself doing it. And I did.

I mean, I heard about gratitude journals before and while they seemed like a great idea, I just never really thought of them, or I would misplace them etc. But writing in my phone, one simple happy thing a day, that was pretty easy. And making it specific, that made it much more fun. Because I got to re-live it. That’s how you feel gratitude, not just think it.

I felt the effects of this little exercise that takes about a minute of my day immediately. I fall asleep more easily. I am more present with my kids. I’m less grumpy. I’m less anxious. I feel more optimistic about my future. I try to fill my mind with as much positivity I can stuff in it (more on that in another post!). And I really do feel like a new person (not sure what my family would say to that, though).

I love Kristina Kuzmic for that (and other stuff)! You should totally check her out. She’s probably one of the funniest, warmest people on the planet. And please, try the exercise for yourself. Today, your note should totally look something like this: “I read about a simple exercise that can change my life today on Zulejka’s blog, and discovered Kristina Kuzmic.”

One day I looked at my Instagram and saw a celebrity blogger that I have followed for years on her blog, but not on Instagram, started following me! I thought to myself: “I must have really made it, huh?” But then I checked myself a little. Ah, she probably just randomly clicked on my blog in an e-mail I sent her, praising her latest post. But still, she wouldn’t follow me if she didn’t like my work, right?

A few days later she started heavily promoting her online course. Ok, so that was the real purpose of her following me. I get that. It’s legit.

But then I began following some Instagram guidelines that I found on a very popular blog. I followed my idols’ followers, uploaded photos on a daily basis, tagged every photo as if it was my job, and soon I followed so many people that I didn’t even want to scroll through my Instagram feed any more.

Instagramming felt like shit.

So I decided to follow another one of those holy Instagram guideliness: unfollowing people. I just unfollowed people who didn’t follow me back. And I started seeing that some people that followed me first, didn’t follow me anymore.

One of them was a girl I actually thought was my potential friend, and the other was this esteemed blogger I just told you about. She probably even has someone hired to manage her Instagram account, by the way, but it doesn’t really matter. I completely lost my respect for her. She’s a phony to me. No, not just because my pride is hurt, but because now I know she doesn’t practice what she preaches (like not caring about your vanity metrics and genuinely caring about people).

It felt like shit.

Not just personally (speaking to all my self-doubt demons that all creative people have), but also on a broader scale: what kind of world is this where just the numbers count? Do I want to be a part of this? Maybe I’ll just start selling bread on farmers market instead.

And aren’t these guidelines actually bad, not just for people, but for businesses? I see at least two ways in which they are hurting your business.

1. Fake Instagram Followers

If you’re following people just so that they follow you back, they’re not worth much. I mean, they don’t really want your stuff, you’re just someone they followed back because they’re polite so you won’t sell them whatever it is you’re trying to sell.

There’s just so much stuff and so many experts out there that people are becoming immune to advertising of all sorts. They will only buy your stuff if they trust you. Random people don’t have a reason to trust you. Following random people does not build trust.

2. You Lose Your Real Audience

Like the blogger I mentioned above, you’ll lose some real followers if you unfollow people so that your feed is cleaner, or worse - so that you look like a celebrity (lots of followers, following just a few). You don’t really know who is who in your army of followers, now do you?

So maybe you just unfollowed someone who’s been thinking about buying your most expensive product (the price of what she earns in a month) for months and has actually been sharing your content to everyone. You know, she might have just read the same guidelines as you for growing your Instagram and now she knows what you did. Ooops! Bye bye, real followers - bye bye customers (and in my/her case, also advocates and promoters!).

So, what do you think about this? How do you use Instagram?

If you're into healthy food blogs this bread won't be new to you. I have seen it pop up on every blog I follow but I think I first read about it on Sarah Britton's vibrant blog My New Roots. She calls it life changing loaf of bread and it really is. The concept intrigued me but I couldn't ever find psyllium, which is an essential ingredient of this vegan protein-rich bread without flour. Since there's no flour AND no eggs in it, there must be something else holding it together, and that's psyllium. When I finally found psyllium I still needed a gentle nudge to try the recipe, sometimes I'm just so cautious, which is really weird since I love experimenting in the kitchen.

This vegan protein bread is dense but not in a bad way - it's just bursting with flavor and nutrients. And it also does a great job inspiring you to make more healthy choices which Sarah Britton is all about. It sure inspired me to make a very healthy vegan toast with spinach, avocado and black salt, and then also a sweet little version with persimmon. I wish I could bite into any of those two right now!

Since I didn't adapt her recipe, I will send you off to Sarah's blog (you can also buy her book full of similarly genius ideas here), but when the protein bread is baked, come back and check my two toasts, ok?:)

Avocado spinach and black salt toast

Avocado toast was such a revelation for me! I love avocado and putting it on toast just makes it so much better - from a mere fruit it becomes a whole meal. Black salt is also a wonderful addition to a vegan diet (or any other, except for low sodium diet maybe) if you can find it. Avocado and black salt make a delicious combo that may remind some of you of boiled eggs (the creamy texture of avocado+the slightly sulphury taste of black salt). If you don't have black salt, try using gomashio instead (or even just sea/Himalayan salt).

2 pieces Sarah's protein bread
a little knob vegan butter (optional)
Persimmon vegan toast

This is so simple but so so good! Persimmons are naturally so sweet they are like natures preserves. No sugar needed here! Just be sure you buy Fuyu persimmon for this toast. "You need to know which you're dealing with: while non-astringent varieties can be eaten, firm and crisp, while barely ripe, the astringent kind – rich, sweet, spicy – are mouth-puckeringly tart until fully ripe. Fortunately, it's not hard to tell when a Hachiya persimmon is ripe, a process that may take several weeks: they should be so soft that their sweet, almost jelly-like, flesh practically bursts through their skins" says The Guardian.

My mom has been baking bread for as long as I can remember. When I was little, she used whole grain wheat flour, but then a family friend started growing spelt on her organic farm, so my mom began buying spelt flour from said friend. That was very hippie then, nobody knew what spelt was and it was impossible to find it in the grocery store. But the bread was now even more delicious, and it came with a fun new feature - no kneading was needed. Kneading was in fact discouraged since the spelt gluten is supposed to be different from wheat gluten: it actually disintegrates or something like that if you knead it too much.

So there it was, wonderful, healthy bread you don't even have to knead. My mom usually tops it with sesame seeds which make it extra delicious in my opinion. Recently she began baking her bread with very little yeast - a slow rise bread.

Slow rise bread trend has been around for a decade or so (it started with Mark Bittman I believe); it seems the web re-discovered slow rise bread even before sourdough bread that seems to be all the rage now, at least where I live (we make our own, too - Michael Pollan made us do it! - and sell it as well). But there's just something wonderfully low-key about slow rise baking that should convince even the laziest baker and all the people who fear that yeasty creature that is bread.

There's no sourdough starter to look after, there's no kneading, there's no multiple proofing, just mix the dough and let time do its job on it.

Slow rise spelt bread

4 cups whole grain spelt flour, preferably organic
about 2 cups lukewarm water
1 teaspoon sea salt
half teaspoon active dry yeast

rolled oats or sesame seeds (optional)

Prepare the loaf mold or dutch oven: lightly grease it with vegetable oil and dust with flour.

In a big bowl, combine all the ingredients and stir with a wooden spoon until thoroughly incorporated. Stir a little more, just so the dough starts forming: you'll know it is forming when it stops clinging to the bowl and starts forming a sort of a ball. Transfer the dough into prepared loaf mold or dutch oven, sprinkle with sesame seeds or dust with flour and cover with a clean tea towel.

Leave the dough to rise in a warm spot in your kitchen (some people even put it in a plastic container with a lid, which is not a bad idea at all). My mom usually places it on top of her refrigerator. That may last anywhere from 6 to 12 hours, depending on the warmth of the environment and quality of your flour. So I suggest you start making the bread in the morning on a day when you're at home and check on the dough after six hours to see if it has risen enough. You'll know it's proofed when, if poked with a wet finger, the dough comes back half way (if the hole doesn't fill at all, the bread is over proofed; if the hole fills back quickly, the bread is not yet ready to be baked). I learned that from my extremely talented and advanced baker friend Natasha, over at My daily sourdough bread (actually, my mother in law tried to explain this method to me some time ago, but I didn't quite get it).

Bake the bread on 350 °F (180 °C) for 1 hour.

So, would you give this super simple bread a try? If you're interested in slow rise breads, this book is an awesome resource.

I'm usually not the first one to try a new trend - I tend to proclaim it a fad and go on with my day. But sometimes I cave in and try a new trend ... And I'm amazed! So it was in the case of Harry Potter many years ago, and so it is now, with the smoothie bowl. I'm a convert!

I mean, it is a smoothie with superfood (or just really pretty) toppings, what's not to like? I urge you to try it if you haven't yet. My oldest daughter even "invented" her own super simple smoothie bowl that she calls smoothie ice cream with oats, not very fancy, I guess, but super delicious and - what makes this mama really happy - nutritious. She just tops her smoothie with rolled oats, that's it.

I took pictures of this smoothie bowl in the summer, so I topped it with summer fruit, peaches, cherries and strawberries. In the winter, I like to top it with toppings such as persimmon, banana, clementines, and of course dried toppings that are not seasonal, for example black sesame, sprouted buckwheat and sunflower seeds, coconut chips, goji berries ... Like this one here that I shared on Instagram.

While smoothies make a great take-along breakfast (I used to carry mine to work almost every day in a jar that came with my Nutribullet), smoothie bowls are a little bit more advanced and make a wonderful weekend breakfast treat or a brunch buffet gem. What's really cool about the smoothie bowl is that anyone at the table can make their own kind of smoothie bowl - customize it with the toppings they like. You kind have to take the time to make it pretty to really enjoy it. But it is super easy, I promise. The natural ingredients do all the job.

There was a time when I read blogs every day and it was a very nice time. I never got to know most of the bloggers I admire so much, but I often feel like we're friends, I take the time to comment on their posts or even drop them a note, I am genuinely happy when they succeed or have a baby, I buy their books and dream about attending their workshops.

One of the bloggers I admire most is Molly Wizenberg of Orangette, which was also one of the first blogs I started following. Her first book, Molly Wizenberg: A Homemade Life, is one of my favorite books, and not only cookbooks but books in general. Her style is just beautiful, and she is an extremely well-read woman. Her life seems fabulous (she reads The New Yorker and attends pottery workshops while running a family business and being a mom), but she always down to earth.
I also love her book because it's filled with vegetarian recipes. That's probably due to her husband being vegetarian. So that makes it a very useful book for me. Lemon cake has a special place in her book because that's the recipe that brought her together with her husband (who was just a reader of her blog when she posted the recipe! How romantic is that? Way better than Tinder, heh?). This is a classic French recipe with lots of eggs but it surprisingly doesn't feature butter. :) I didn't think I could successfully veganize it, but then I thought of a magical ingredient - chickpea. I'm pretty sure you would never have guessed it.

Vegan Lemon Cake recipe

1,5 cups (250 g) unbleached all-purpose flour
2 tsp. baking powder
2 tsp. grated lemon zest
1 cup granulated sugar

2 handfuls candied orange peel (completely optional)

<span style="background-color: white; font-family: "lustria"; font-size: 15px; text-align: justify;">

0,5 cup soy yogurt (plain or vanilla flavored)
3 tbsp canned chickpea
6 tbsp aquafaba (canned chickpea brine)

0,5 cup canola oil

juice from 1 lemon

For the glaze:
Juice from 2 lemons
1/4 cup (100 g) powdered sugar

<div class="ingredient" itemprop="ingredients" style="background-color: white; box-sizing: border-box; color: #262626; font-family: "Mercury Text G1 A", "Mercury Text G1 B", Georgia, serif; font-size: 16px; margin-top: 0.25em;">

Preheat oven to 350 °F (180 °C).
In a large bowl combine all the dry ingredients. Mix with a spoon, just to combine.

Place chickpeas and aquafaba in a blender, add soy yogurt and oil and blend into creamy paste. Mix in the wet ingredients, stirring to incorporate.

Pour and scrape the batter into a buttered 9-inch round cake pan or whatever small-ish pan you have lying around.

Bake for 35-45 minutes at 350 °F (180 °C). Let cool completely, then pour lemony syrup all over it. To make it, mix lemon juice with sugar until it dissolves. Alternatively, you could just sprinkle the cake with some powdered sugar and garnish with pommegranate seeds.

I'm pretty sure smoothies are modern potions. They combine the best of nature with the best of technology to make you healthy and strong! I just love them. In winter I like to use frozen fruit, but dried fruit is also a great option if you want some variety.

Goji berries are one of the first superfoods I fell in love with. They have a very unique taste and a ton of health benefits. And they have a surprising amount of protein for a fruit.

"These berries contain all 8 essential amino acids. A single 4-ounce serving provides nearly 10 percent of your daily value for protein", says Health line.

Goji berries are actually so powerful you may want to be careful with them if you have medical conditions related to blood sugar or blood pressure and if you're pregnant or nursing.

But apart from that, they are really a superfood that can aid in weight loss (so relevant right now, ahem!), they help fight flu and inflammation in the body. They are even considered a natural alternative to the blue pill!

Well, if that's not enough reason to put goji berries into your winter smoothie, I don't know what is! Come on, let's get blending!

Winter smoothie with goji berries

a handful prunes (pitted)

a handful goji berries

1 banana

small piece ginger

juice of half a lemon

a cup hemp seed milk

1 teaspoon honey/agave nectar

Place prunes and goji berries in a bowl, cover with water and let soak for 4-8 hours. Put all the ingredients, including the soaking water, in a blender and blend on high speed for about a minute. Pour your goji berry smoothie in a pretty glass and serve immediately. You'll be rewarded with a beautiful winter smoothie, full of antioxidants, iron, vitamin C, omega 3 and 6 fatty acids, potassium, and calcium that may keep you going strong all winter long! Yay!

In my parents’ garden grows a beautiful persimmon tree. Every autumn it is so full of persimmons, the branches almost start to break. My parents pick the persimmons while they are still hard and very bitter, they stack them in crates and gradually bring a few at a time in the kitchen so the persimmons don't all ripen at once. My father makes a green smoothie almost every day, and when there are persimmons in it, no bananas are needed - the green smoothie is creamy and smooth as ever!

Spinach is easy to find even in winter, and it will give you the green boost you need, while also providing tons of vitamin K and A, some iron, magnesium and calcium, lots of fiber, all that in like 7 calories! Crazy, right?

Kiwi, clementine, and persimmon bring in vitamin C and A to boost our immunity. That’s also why superpower barley grass is added in this winter green smoothie. But barley grass does so much more than that: it helps us detox and even fight cravings! “The presence of glutamic acid in barley grass inhibits the craving for harmful materials such as alcohol, coffee, nicotine, drugs and even sugary sweets”, according to Organic Facts.

To enhance the immunity function even further I added some spirulina powder which helps lower cholesterol, increases red blood cell count and is supposed to help control bronchial asthma. And there’s also some ginger, the number one winter ingredient, thrown in for a good measure of anti-inflammatory powers. Authority nutrition also states that “ginger extract can inhibit the growth of many different types of bacteria”, which is really great news, especially in the winter time.

Winter green smoothie recipe

a handful spinach, washed

1 persimmon, washed, leaves removed

1 kiwi fruit, peeled

1 clementine, peeled

1 ripe banana, peeled

1 small piece ginger (a thumb), peeled

1 teaspoon barley grass powder

half teaspoon spirulina powder

1 teaspoon honey or agave nectar

juice of half a lemon

2 cups water

ice cubes (optional)

Wash persimmon and spinach. Peel kiwi fruit, banana, clementine and ginger. Juice half a lemon. Place all ingredients in a high-speed blender and blend for about 30 seconds (or choose the Smoothie cycle if you have a Blendtec).

Do you drink smoothies in winter, too? What's your favorite winter ingredient in them? Let me know in the comments! (Also, let me know what writing mistakes I'm making:))

Yes, technically speaking, it is still autumn! Blogosphere is full of Christmas decorations, but I'm reviewing autumnal decor before I jump onto Christmas wagon. I do still owe it to Douglas Elliman and their Florida office who reached out and kindly asked me to share my autumn inspired decor.

I love folliage as much as the next person, but it has a downside - it expires too quickly and it can look messy. One of my favourite decorations in autumn are those branches with red berries that I don't know the name of - does anyone know what those are called? I would love to plant a tree in my backyard, so I could enjoy those "berry buquets" in my home every autumn.

Pinecones

As a kid, I loved collecting pinecones and stones on the beach. Now I collect pinecones with my two kids in our forrest and on the beach when we visit the grandparents. Pinecones are lovely to use as decorations, but also as materials for crafting. I included them in our Solstice wreath, some people make Christmas wreaths with them, or ornaments for Christmas tree.

It's a bit funny to me, but besides collecting your own, you can also buy pinecones. Maybe I should start selling them, too. :)

Pumpkins for a touch of whimsy

I adore pumpkins! They're easy to grow, they are delicious, and they make for perfect decorations in autumn, too! And very lasting, at that. We don't celebrate Thanksgiving in Slovenia, so they don't have any special meaning, I just find them pretty. The pumpkin on my hutch is called Muscade de Provence and is sitting there ever since I harvested it in the end of September. So that's nearly three months now! It was greenish when I placed it on the hutch, but it slowly changed color to a beautiful orange. It reminds me of Cinderella's carriage. Oh, and when we're through with it, we can make pumpkin pie!

The two White Scallop Squash are on my white credenza for the same lenght of time. They have a few brownish spost but are still beautiful and autumn-y. They almost look like sculptures because they're white!

Textiles for warmth

I use fake sheepskins from Ikea as dining chair warmers in autumn and winter. It get's chilly here and anything that brings warmth is very welcome. The fake sheepskins also evoke a very primal. very earthy and rustic feeling that I like, but they also look somewhat etheral, when the sun catches in their fluff. I know, I'm weird. For those comparisons, not for using fake sheepskins on chairs, wich is a common practice (I've seen them paired with rustic benches, modern Eames chairs, etc.).

I have also used a tartan blanket scarf to "dress" my midcentury armchair, but I didn't take a picture. It's really cool though. Just trust me:)

Evergreens instead of flowers

Everegreens are a great way to bring nature in when there are no wildflowers to pick or garden flowers to cut. They last a long time, they are free (or cheap), and so elegant! I love to just place them in a glass vase, bottle or even just a big canning jar. They have a zen quality to them, don't you agree? That makes them perfect minimalist decorations. If you are more of a maximalist, try mixing an matching different sorts of evergreens and adding silk flowers, ribbons or Christmas ornaments.

Evergreens, pinecones and fluffy textiles are transitioning into winter seamlessly. I'm just slowly adding a bit of sparkle and fairy lights to make the home look more wintry and ready for hoildays.
When I was a little girl, I didn't like peas. Well, I would eat fresh peas straight from a pod, but whenever they were cooked, I just hated them. Now I really like peas! They're a great way to add plant protein and fiber to your diet. And they're really cheap, they cook in no time, and you can always have them in your freezer, ready to cook a delicious, creamy, hearty and fresh soup, packed with protein and fiber.

I really like this vegan pea soup, and so does my husband. As for the kids, the votes are split. ;) The youngest one loves it, the older wouldn't even try it. If you're not a pea-hater, you'll probably like it, too! Especially with a swirl of organic sour cream or creme fraiche or vegan sour cream and maybe some homemade croutons ...

This soup is:
- vegan
- creamy
- protein-rich
- fiber-rich
- aromatic
- fresh
- easy to make
- quick!

Creamy vegan pea soup recipe

adapted from Ina Garten

serves 4-6

2 handfuls cashews
200 g/2 cups leeks
500 g/5 cups peas, fresh or frozen
1 tbsp olive oil
1 litre/4 cups vegetable soup
a few sprigs lemon balm
a sprig tarragon
lemon juice to taste (about a half lemon)
salt and pepper to taste
chives, to serve
sour cream, to serve

Dry toast the cashews in a skillet on low temperature. Set aside.

Chop the leeks and set aside. Heat olive oil in a pot. Add leeks and saute until leeks soften a bit (do not let them brown). Add peas, cashews and veggie soup. Let boil and cook for about 5 minutes or until peas soften.

Add fresh lemon balm and tarragon. Transfer the soup into the blender and blend into creamy deliciousness. Taste and add lemon juice to taste (be careful not to make it too tangy).

Swirl in some sour cream or creme fraiche, if using, and sprinkle some chopped chives on top. Serve with croutons - or as it is.

So, how do you like your peas? Do your kids eat them at all?;)
The first time I saw a painted window frame (it was the brightest yellow), I fell in love with the idea. Since we have plastic frames in our kitchen and living room, we obviously can't do that there, but kids have wooden window frames in their room, and what better place to add color than kids room? I'm thinking raspberry red or pistachio green for their room, it would go great with their Cath Kidston wallpaper. But I also really want to have a yellow window frame. Maybe in the toilet;)

Here I gathered some inspiration across the internet. It seems painting window frames in bold colors isn't as widespread as one would think. I mean, it' so lovely and cheery! But I managed to find some great inspirational photos. What do you think? Would you paint your window frames?

The past month was very hard for me. I was expecting royalty payment, so I was spending more than usual. But I ended up spending more money than I had on my bank account because they didn't pay me, and I behaved as if they did.

Thankfully, I stumbled upon the concept of spending freeze on Pinterest that very day (without even looking for it!). The idea is to stop all your spending except for absolute necessities, and even for those you have a set budget (very low). You cook from your pantry and cut any spending in other areas as well for a set amount of time (minimum of 2 weeks, maximum 1 month). I used to do something similar every time the money was tight, but it was never so well thought out.

It was a very poor timing for a spending freeze since our daughter's birthday was right in the middle of the spending freeze and my husband had to take a tractor driving test, which costs a lot. There's barely anything growing in the garden at this time of year, and the harvested and frozen produce is almost all gone. But I felt like we really had to jump into the spending freeze wagon. Since I decided on it on a whim, I didn't feel like we should force ourselves into enduring it for a whole month.

Our daughter's birthday turned out really well. I'm planning to write a post about planning a party on a budget, so stay tuned. It was a very low budget and low key party, but usually, this kind of parties turn out to be the most fun.

I didn't set a timeframe for our spending freeze, but I decided we should stick with it for at least two weeks, which we did. It wasn't really hard. But right after the two-week mark, my family started to put pressure on me (my little one, F, wanted yogurt, the older one, L, wanted spaghetti, my husband was pretty upset one morning because there was no butter), so I decided we should call it a day. If I had been better prepared for this and planned every meal in advance (and especially snacks!), we could have probably lasted longer. Now I know how to better prepare for the next spending freeze (I have to figure out how to do it without defeating the purpose;)).

So, for breakfast, we usually eat homemade bread with butter and homemade jam, which is a very Slovenian breakfast, but we do occasionally have granola, millet kasha or pancakes. Lunch is the biggest meal in our household, and dinner can be anything from cereal with yogurt to a three-course meal. There's a lot of snacking since we have two little kids.

That's a bit daring, putting "the best" in the title about a simple baked oatmeal, huh? Well, I actually thnk tis IS the best oatmeal. And judging by reactions of my family when I served this I am not the only one.

I actually wanted to make regular amish baked oatmeal like this one or this one with homemade soy milk, but something went wrong in the process of making soymilk and it curdled. I found that out when I already prepared the oatmeal halfway, so I had to find a quick solution. And I thought of greek yoghurt sitting in my fridge minding its own business. Since oats and greek yoghurt pair well outside the oven, I thought: why not bake them?

This baked oatmeal is rich, dense, but also soft and bursting with flavour! I wanted to put cubed apples in it, but forgot (you can see from this recipe how disorganized I am - I'll have to work on that!), so I served it topped with grape jam I made last summer from our grapes. It was a match made in heaven! You could use raspberry or strawberry or any jam you like in place of grape jam. Or even some fruit compote or ice cream!

1 cup quick cooking oats

1 cup old fashioned oats

1 tsp cinnamon

1 tsp baking powder

a pinch of salt

3 tbsp unsalted butter, melted

1/3 cup brown sugar

3 eggs

1 cup greek yoghurt

Preheat oven to 200 °C/400 °F. Grease a small ceramic or glass mold with butter.

In a medium bowl, combine the oats, cinnamon, baking powder and salt.

In a large bow mix together the eggs and sugar with a fork, then add yoghurt and mix some more.

Add the oats to the eggs mixture and stir to combine.

Pour the mixture into prepared casserole mold and put it in the preheated oven. Now set the temperature to 180 °C/350 °F and bake the oatmeal for 35 minutes.

Serve warm with fruit jam, fresh fruit or fruit compote.

I always used to read a lot, usually switching back and forth between romance/crime novels and classic literature. Then there was serious literature about sociology and theory of literature, of course. But since I've become a mom, I can't read crime fiction to save my life! Just makes me sooo anxious to read about all the things that go wrong ... And I can't seem to muster any concentration to read anything serious after kids go to bed ... So I'm only reading romance novels right now. I know, I know! But they are just so comforting, and they fill me with hope and give me a positive outlook on life. And you need to know that as a literature student, I am very picky (for the life of me, I couldn't finish 50
Shades of Grey and I could barely make it through the Twilight saga), so you can trust me with your reading list;). So here are my favourite romance authors in no particular order.

The Addictive Novel Writer: Lisa Kleypas

When I first borrowed a book by Lisa Kleypas from the library, I was a bit selfconscious. I mean, there was a half naked lady on the cover, clearly speaking about the content to anyone on the bus who might see me reading it. I was a litearure student, shouldn't I be reading Proust and Dostoyevsky? Sure, and I was, but everybody needs a little bit of Lisa Kleypas sometimes. Her carachters are beautifully flawed, always believable and relatable, and also very varied. Some heroines are bold, others shy, every heroine has a different body type and they always have an interesting background. The same goes for the dashing heroes, except they are always very much alpha males. And we need that in fiction, don't we?

I love how she writes her novels in serials, so you get a glimpse of your beloved couple even after their fairytale wedding (here's a spoiler: all her books end in wedding of the couple! I hope that doesn't spoil your reading pleasure;)). Recently I finished reading The Hathaways series of regency romance novels and I began The Travises series right away - I'm about to finish the last book in this contemporary romance series, Brown-Eyed Girl wich takes place in Texas and it filled me with such wanderlust ... I want to go to Texas, now! And when I finish that one, I have to wait for the second book in her new series, The Ravenels (I read the first one before begining the Travises). She just keeps getting better and better! Oh, I have to warn you: there's some violence in her books, and a lot of graphic erotic scenes - but that's really a good thing in my book.

The Most Romantic Romance Writer: Nora Roberts

I can actually remember walking into a library and borrowing my first Nora Roberts book. It was a Born in Ice, the second in the series of three; the summary on the back of the book seemed promising albeit a little cheesy to my literature student self, but then I opened it a - bit sceptically - and was immediately immeresed in the world of Brianna Concannon. I fell in love with the story not knowing that it had two sisters, and when I discovered that it did, it was like Christmas morning. I loved the other two books just as much. I also really enjoyed In The Garden series. What I love about Nora Roberts' books is how her heroines have some bad things happen to them, sometimes like really bad, but then they emerge from them renewed and stronger, each one at her own pace, and they find love along the way. Oh, and another really nice thing: there's always a strong bond between women of different generations. It gives me hope there's always people in the world who want to help.

The Very Smart: Courtney Milan

I only recently discovered Courtney Milan and it was a very pleasant surprise. All her romance books are actually very smart, from what I hear, and that's really not hard to believe after reading The Duchess War. I am very much looking forward to reading more from her.

The Classic: Jane Austen

Well, Jane Austen. Need I say more? I watched the movies first and read her books later, and I still enjoyed them very, very much. For someone whose maternal language is not English, they are not as easy to read as forementioned books, but they are well worth the effort. When I was in University, I thought Jane Austen would be looked down upon, but then a Professor of Poetry once said that her books are so great because there's such a strong realism of emotion in them. And that is still my favourite way to tell why I value Jane Austen so greatly. I found my set od Jane Austen books at a suspiciously small price (I thought the price for the whole set was a price for just one book!), but this one looks breathtakingly beautiful - as it should.

The Playful: Julie Garwood

Beside contemporary romance novels and regency romance there's another subgenre I fancy: the highlander romance novels:) There's just this thing with fictional Scots ... They have clans, they have kilts, they fight a lot, drink a lot and love ... a lot. The first Hihlander romance novel I read was by Julie Garwood. It was very sexy albeit not very realistic (the heroine really enjoyed her first sex, for example) - but who needs realism, right? Soon after I read it I overheard two high achieving (somewhat nerdy, in a good way) high school girls talking about it. "If it is really like that then it must be really really nice," one said dreamily. "It" meant sex, I'm pretty sure. I couldn't help but smile. I just couldn't bring myself to tell them it's not like that the first time ... but it can get there. As much as I enjoy Julie Garwood, I can't read her books one after the other. But there's a whole lot of Highlander romance in the world and my love for it is renewed since I'm watching Outlander (I want to read the Outlander series too, but for now I enjoy watching it sooo much I don't need to read it yet;)).

So, what do you like to read? Who are your favourite (romance or other) writers and most loved books? Do tell, I'd like to expand my reading list! ;)

Sooo ... I'm back to my English site after a long long time. My writing is a bit rusty, but I hope you will forgive me and help me polish it - any grammar enthusiast around? I've been wanting to tell you about these vegan gluten free cookies for ages! I first found a recipe for a buckwheat cookie on a blog I really like, Food Loves Writing. While I like all ideas Shanna and her husband come up with (like their great book all about the amazing grain called Einkorn), these cookies stole my heart right away. I had too try them immediately! With a slight adaptation - I made them vegan. And they were a huge succes! I even included them in my cookbook (wich is written in slovene, in case you're curious;)).

So, what are they like? Soft, crumbly, but not too much. The combination of buckwheat and bananas is just heavenly in my opinion - and chocolate makes it even more irresistible. I first made these vegan gluten free chocolate chip cookies for a friend with celiac disease, but they are free from any weird additives you usually find in gluten free cookies, and are easy too make with what you have on hand. Well, maybe you don't have chia seeds in your pantry, in wich case you can substitute with just flaxseed. My husband is not very fond of chia seeds, but he loved these cookies: "I like them because they are tender and chocolatey, not because they have chia seeds in them!"

So, let's get down to baking, shall we?

Preheat oven to 180°C (360°F). Prepare a cookie sheet and line it with parchment paper.

Shape the vegan gluten free chocolate chip cookie dough into balls, flatten a bit between your palms and put them on the cookie sheet so that they will enough space around them, because they tend to expand quite a bit.

Bake for 10 minutes. The cookies will be quite soft but don't panic! Let them cool on the baking sheet for 10 minutes or so, then transfer them on a wire rack to cool completely. Store in an airtight container for up to two weeks.

I made this cake a while ago for my fathers birthday. I wanted it to be raw because he likes raw food, and because it is so easy to make, even with a baby crawling around your legs the whole time. There really isn't any seasonal fruit yet in these parts so after scouting four (yes, four) stores I finally decided to go with imported berries, In the end they turned out lovely indeed!

Pine nuts add a completely new note to a well known cashew raw cheese cake. The taste of pine nuts blends so well with lemon zest and tangy berries. I don't want to brag, but I really want to share this one little comment about it: "this cake is so good you don't want to eat it, because then it's gone".

Raw cheese cake with pine nuts and berries

crust

1 cup almonds, ground

1/2 cup dates plus 1 dried fig, soaked overnight or at least a few hours

pinch of salt

filling
1/2 pine nuts
1,5 cup cashews
juice of two lemons
1 tablespoon coconut oil, melted
5 tbs agave nectar (or more, to taste)
zest of one organic lemon
pinch real vanilla powder
water as needed

topping
1/2 cup blueberries
1/2 cup raspberries
1 cup strawberries
agave nectar as needed

decorations
edible flowers such as violets, lavender, daisies, roses, etc.

If you're not blessed with a super high speed blender like I am not, it is best to gring each ingredient individually.

In a blender or a food processor grind almonds, transfer into a bowl and put aside, then turn soaked dates into paste using your blender or food processor. Add a pinch of salt and mix all the ingredients into dough-like ball. Lightly grease a cake pan with coconut oil,. then press your dough into it with damp hands. Store in the refrigerator.

Grind pine nuts and cashews in a coffee grinder, transfer them into a bowl and add lemon juice, agave nectar, coconut oil, vanilla and lemon zest. Mix well and spread the raw cashew and pine nuts cake filling onto the crust. Smooth it out with a damp spatula.

Put in the freezer for 15 minutes then transfer it into the fridge.

Right before serving, arrange berries on cake, sweeten a bit with a few drops of agave nectar if desired, and decorate with edible flowers.

Today is the second day of my blog-detox week and I'm kind of struggling, much more than on Facebook-detox. I guess that must mean I'm addicted to other people's creativity ... and that I have no life of my own:) Since I can't read other blogs, I'm just going to write more on my own. There's a theme I wanted to write about for some time: gifts for a new mom/new family.

We visited our friends yesterday, a lovely couple with a six weeks old tiny bundle of joy. I was impressed by tiny-ness of the little guy's feet. I just couldn't believe my Lila was ever that small:) I thought about what to bring as a present for the new family a lot, and ended up bringing them some cute little pajamas, bath-time animals, and pacifiers for the little one and chocolate financiers for the parents. I wasn't completely satisfied with presents, but they seemed pleased enough.

So here's a list of presents for a new family that I thought of for future reference:

1. Food!

When you're a young parent, it isn't always easy to find the time or the energy to cook. Trust me, I know;) Bringing a home-cooked meal to a new family seems a perfect gift to me! There is a question, what foods to bring, though. I like to cook with a lot of spices and beans and cabbage, and these are all things that some breastfeeding moms prefer to avoid...

2. Jewelry

I got a tiny gold bracelet (along with a ton of cute stuff for my little girl) from my aunt when she first visited me and my little new family. Even later I learned that the family was supposed to give gold jewelry to a new mom (maybe just to the first time mom?). I liked the gesture a lot, even though the bracelet wasn't really my style. But I so love these!

To be honest, though, I prefer earrings to bracelets. But it's almost impossible (even dangerous!) to wear dangly earrings when you are carrying a baby around. Maybe not when she's a newborn, but soon she will start grabbing those pretty little sparkly things. So stud earrings are the obvious choice for moms.

3. Photos

Many new families decide to hire a professional photographer to take photos of their newborn. But some just forget to book the photographer (they are very busy people) or can't afford to, and you can step in here. You can, of course, gift them a voucher for a photo session with the local photographer, but if you have a camera yourself, you can snap a few photos of the newborn and the whole family, even if you're not a professional. Set the camera on black and white, shoot in natural light, edit photos with a free software (before Lightroom, I liked to use Picasa, but there're tons of others, just google it:)) and you'll probably end up with at least two photos you'll like. Have the best one printed on a canvas and you have a unique present for the new mom (and dad, and grandma ...), like, ever.

What gifts do you like to bring to new moms? What would you like to receive?

My Facebook-free week is well over.

I couldn't say I was a lot more productive when I wasn't "allowed" to use Facebook, but I was at a loss what to do when I sat at the computer. I didn't really miss it though. And yes, I did cheat! And not just once ... That's probably the most interesting part of this little report:)

The cheating ... yea

The first day, I cheated unintentionally because I just couldn't get used to the idea of not using FB, so I kept refreshing it ... I think I did it four times!

Then the second time ... My sister just started a giveaway on her gorgeous blog she has with a friend, and she asked me to share it on FB ... I just couldn't say no to her, so I begged T. to post about the giveaway instead of me:) It was quite hard to persuade him, he asked me "What's the point of detox then?", but then he did it. Thank you, T.!

Sometime during this week T. found the amazingly funny Macklemore and Ryan Lewis and we just couldn't get enough of their Thrift Shop. And the next day I heard their wonderful and heartwarming song Same Love on the radio and I just had to share ... just had to. And guess what? Nobody even saw it or commented on it ... I'm just not a very feedback-y person, I guess.

Site Blocker

A friend of mine suggested I try a site blocker exstension, so I tried a Chrome Extension StayFocusd that blocked my gmail and Facebook after 10 minutes ... Well, 10 minutes of FB AND Gmail is very little. So I turned it off, since I need both for my (unpaid, for now;)) work. Oh, since my FB-free week is over, we can now connect through Facebook.

The Conclusion

The conclusion is, Facebook is not the core of my procrastination. Oh well. I didn't visit or phone my friends more, as was one of the hopes for this week. I guess one week is probably just not enough ... But! I did spend a lot of time outside and taking pictures. But this has more to do with beautiful weather than absence of Facebook, I am affraid. You can see I was experimenting with backlight photography just a little, and I found the use for the self-timer on my camera. I was inspired to "get in the picture" by this beautiful post. Not a very FB-related topic, huh.

Parfait! It's the first time I made a parfait thinking about making a parfait. I wasn't very fond of fancy desserts, but this was actually pretty easy and the result is quite stunning. At leats for my untrained-in-fancy-ness eye.

I call it parfait even though this is nothing like the traditional parfait since it has zero sugar, gelatine or dairy. Their gorgeous looks is all they have in common. These little jems are packed with fruit, the good fat and natural sweeteners such as dates and agave nectar. And they are also raw, wich means - enzymes! It's the perfect spring-to-summer dessert, light, refreshing and really pretty if I do say so myself:)

agave nectar, a few drops

raspberries, around 15 pieces (just buy a small container), washed and patted dry

Decoration

a couple of unsalted, raw pistacchios, chopped

cocoa nibs

bee pollen, a pinch or two (omit if you are vegan, of course)

To make the vanilla custard, grind the cashews in coffee grinder. Transfer the powdered cashews to a medium bowl, add chia seeds and vanilla and stir. Add agave nectar. Gradually add water until you get just the right consistency. Cover the bowl with a plate or lid (or cling film, if you must) and put in the refrigerator.

Prepare the chocolate layer: blend all ingredients in a high speed blender or food processor. Taste and add some agave nectar if desired. Refrigerate.

After about two hours of chilling, assemble the parfait.

Prepare three small jars. Divide chocolate custard into (imaginary) thirds and spoon each one in one of the jars. Top it with chopped strawberries, sweetened with a few drops agave nectar. Spoon one third vanilla custard into each jar and top with five raspberries.

Make it pretty with some chopped pistacchios, cocoa nibs and bee pollen. Serve immediately or chill for a few more hours.

My Pinterest-free week wasn't revolutionary at all, to be honest.

I didn't really miss Pinterest that much, but I did want to use it a few times. I was hosting a small brunch on Friday, just for me and my friend, and I decided to make a quiche. I would usually attempt to find a nice one with the help of Pinterest ... But this time I found a really great recipe for leek quiche anyway, using good old Google.;)

I also wanted to check a recipe I had pinned some time ago, but then I just invented one instead, and it turned out wonderfully. I will be posting the recipe shortly, and I hope somebody will pin it:)

I was expecting to be able to put more time into finishing the DIY project that I pinned earlier, but I wasn 't very productive nor succesful for that matter.

This was my DIY to-do list:

Dolman shirt out of T-shirt
A Whale
Salt Dough Footprint
Learning some Photoshop
Stamps

I started the week with salt dough footprint project, because it seemed easy enough and I tried it before as well. I made three attempts but wasn't satisfied with the result. The dough crackled a little, and also, my little one pressed into the dough to hard with her big toe:)

So I tried to make my Dolman shirt. Instructions were pretty easy, but sewing machine didn't cooperate. I'll try to do it this weekend with the help of Tadej's aunt. Hope she'll be willing to:) I did make another thingy with one of Tadej's old T-shirts, and it turned out almost wearable. This project didn't call for sewing machine, just some scissors:)

I watched two or three PS tutorials by Alex Beadon. She's fun and I think I did learn a few things about PS (and some about the About me page, you should check them out, too!). I didn't get to trying them out on my own though.

A whale. Well, I didn't even get to thinking about that:) Same goes for stamps...

The conclusion

I guess Pinterest wasn't really sucking that big a portion of my (potentially creative) time after all. It is my newest addiction and maybe I just think a spend a lot of time there. I do however have a lot to do about the house (I'm not a very good housewife) and well, my hands are also full with the baby (that will soon become a toddler, a fact I can't wrap my mind around!).

I did a lot of cooking, though, as I mentioned above. Some very pinnable items, I dare say:)

So, now a Facebook-free week awaits me. I already suck at it: I forgot I shouldn't be using it ... four times in a day!

Spring is a great time for detox, they say. I decided to do a special kind of detox this year: a social media detox. What do I mean, you ask? I mean abstaining from social media for a month. Before you pronounce me insane, I will tell you why there's a "mini" in the title. I will only be abstaining from one of the oh-so-addictive social media thingies at a time, changing them weekly.

Why on Earth would I want to do that, you ask? Well, I noticed I spend waaay to much time checking Facebook, Googling everything that comes to mind, admiring all the pretty Pins in the world, and reading a thousand blogs. Thankfully I don't use Twitter or Instagram. Oh, and I don't find LinkedIn addictive at all;) I think social media is eating away my creative time, and with this little experiment I'm going to prove wether that's true or not.

The plan is as follows:

Week 1: Pinterest detox

No Pinterest. I choose it as the first one since it is my most recent addiction, and quite sever, too:) No pinning, no salivating over other peoples pins ... Instead of just looking at pretty suff I will try to make some. Finally the time to put those pinned DIY in action!

Week 2: Facebook detox

No Facebook. I choose that randomly. That will probably be the hardest thing to do, since I check Facebook several times a day, even though I ask myself each time: "What am I even looking for here?" I think it will be particulary hard since I'm living quite far from my family and friends and I do get lonely. Well, I guess my phone bill is going to be a bit bigger this month ...

Week 3: Google detox

No Googling things! I have a strange obsesion (or maybe it isn't so strange nowadays?). I'm an info-maniac. I will google just about anything, from recipes, to baby ailments to plain old weird stuff (such as Can a baby kill you, just to see if a similar thought passed anyone elses head as well... You would be surprised;)). The hardest part will be not googling adresses and useful info (such as temperature conversions from Fahrenheit to Celsius and vice versa).

Week 4: Blog detox

No Bloglovin. I will also ignore blog posts from my favourite blogs shared on Facebook. Sorry guys! I don't think this is going to be particulary hard, though. I will of course continue to write my two dear blogs. :)

Week 5: Total Social Media Detox

Well, almost. To sum it all up and tie it with a bow, I will abstain from ALL of the above. I will only read my e-mails and that's it. So please write me an e-mail during this time;) Or better yet, send me a handwritten letter.

I don't know if anyone will be interested in my journey, if you are, please comment or send me a word of encouragement. Anyone wanna join me? ;)Zulejkahttp://www.blogger.com/profile/06327054941114577526noreply@blogger.com2tag:blogger.com,1999:blog-8950003107197080872.post-4374627333942723322013-04-01T04:08:00.001-07:002013-04-01T04:11:37.855-07:00A wholesome energy drink: Ginger-lemon tea with coconut oil

Ginger-lemon tea with coconut oil.

Sounds crazy, right? The idea of putting coconut oil in my tea seemed pretty wild, but then I remembered about Tibetan tea with yak butter that I always wanted to try (though it sounds somewhat gruesome and I hear people often puke after tasting it), but you know, I'm quite adventurous when it comes to tasting things (as long as it's not a dead animal, of course).

So I went on and tried this wholesome energy drink. I must say it did fill me with energy, and the taste wasn't half bad. Also, it's supposed to keep germs at bay wich does kome in handy since winter isn't showing any since of leaving this year (we had snow in the morning. Now even I am fed up with it!).

So here's the recipe.

Wholesome, homemade energy drink: Ginger-lemon tea with cocnut oil

1 lemon, juice
cinnamon, to taste
1 tsp organic, unrefined coconut oil per cup of tea, beside the teacup at serving

Peel the ginger root, cut it in small pieces, put in pot with cold water and boil for 5 minutes. Add some cinnamon (about half a teaspoon) then let steep for another 5 minutes.

Add lemon juice and honey and stir.

Serve with a small teaspoon of coconut oil aside.

I'd rather blog about a dandelion salad with strawberries but it looks like spring has forgotten to visit this year. We have about 30 centimeters of snow outside! So I'm posting a wintry recipe. I don't know about you, but orange-chocolate combo sounds like winter to me. This is actually more of a formula than a recipe but I think it is very much worth posting:) I love this chocolate syrup, I can't wait to pour it on some raw mint ice cream! Spring, please come soon, I'll make you ice cream.
almonds, enough to cover the bottom of your tartlet pan

dates, enough to cover the bottom of your tartlet pan

organic powdered vanilla (or vanilla essence)

a little bit of warm water

Raw tartlets filling

cashews, enough to cover the bottom of your tartlet pan
juice of half an orange per tartlet pan
1 tbsp agave nectar per tartlet pan

1 tsp chia seeds per tartlet pan

grated zest of organic orange

Raw chocolate syrup

1 tbsp agave nectar

1 tbsp raw cocoa powder

1 tbsp unrefined coconut oil

Decoration

grated zest of organic orange

Soak dates in warm water for at least two hours. In a food processor, add all ingredients and process until well incorporated. If you have a weak food processor, I suggest you process almonds first, then add dates and a little water from soaking the dates. Press the dough into the molds/pans to create a pretty shell.

Grind the cashews in a coffee grinder into fine meal, transfer to a bowl and add the remaining ingredients. Mix well and pour the creamy mixture into prepared shells. Refrigerate for at least an hour.

Melt the coconut oil, mix in the cocoa and agave nectar. Keep in a warm place. Right before serving, pour the chocolate on your tartlets. Since they will be cold, the syrup will be hardening quickly because of the coconut oil. You can try and create interesting patterns with it or you may just do something simple, like I did.

Decorate with some grated orange zest and serve!
